INGREDIENTS YIELD: 32 TOTAL
· 4 cups flour
· 1 tsp. cinnamon
· 2 tsp. baking powder
· 1 tsp. mixed spice
· ¼ cup mixed seeds
· 2 rooibos tea bags
· ½ cup raisins
· 2 eggs
· 4 dates
· 1 1/2 cup yoghurt
· 2 Tbsp. honey
· 2 Tbsp. sweetener
METHOD
1. Pre-heat your oven to 160
2. Line a baking tin
3. Sift the dry ingredients (flour, baking powder, cinnamon, mixed spice). Open up the tea bags and add in the tea leaves
4. Mix the wet ingredients (yogurt, honey, sweetener and eggs)
5. Add raisins, mixed seeds, chopped dates
6. Knead the dough and place it in the lined baking tin (you may need to spread it out). The mixture will be slightly sticky
7. Bake at 160 for 30 min
8. Remove from the oven cut into 32 pieces
9. Put back in the oven at 70 for 1 to 1 1/2 hours (depending on your oven) or until golden brown and dry
10. Store in an airtight container
