This is one of Elmarie’s favourite recipe’s that she adapted from Deliciously Ella. It is so good that you won’t even know it is healthy. Even her kids are asking for it the all the time – they think there is actual caramel in it 😜! This recipe works beautifully for both individual mini pies and larger sized pies too.
INGREDIENTS
For the first layer:
1 cup of my homemade muesli
2 tablespoons Oh Mega peanut butter
2 tablespoons honey or maple syrup
6 Medjool dates
For the middle layer:
2 ripe bananas
2 tablespoons Oh Mega peanut butter
For the top/caramel layer:
6 Medjool dates, pitted
4 tablespoons Oh Mega peanut butter
1 ripe banana, plus 1 more for layering
METHOD
For the first layer:
Start by making the base. Place all the ingredients from the first layer in a food and blend for a minute until a crumbly mix forms. Fill the bottom of two glasses with the crumble.
For the middle layer:
Blitz the middle layer ingredients in a food processor. Top the crumble with the banana layer.
Slice some banana over it and go on making the caramel layer-top layer.
For the top layer/caramel layer:
Blend all those ingredients and layer it on top of the bananas. Let them set for 30 minutes or overnight. Top with banana just before serving.
